This organic unfiltered extra virgin olive oil is obtained from a Sicilian indigenous variety of olives, the “Biancolilla Caltabellottese”. 

The olives are picked as soon as they begin to ripen, and rushed to be cold pressed that same day.  The extract is then simply allowed to settle.  This process ensures that the oil remains in its absolute natural state with an intense aroma and a delicate and complex flavor.

The organic cultivation of our olives together with our whole operation is overseen and certified by Ecocert Italia.
